 Crunchy Harvest Mix

The perfect salad mix for lunch or light dinner. I am not a salad eater, but I have found the best blend of natures harvest that I find delicious and nutritious. This is just a basic blend that is more than just iceberg lettuce and goes well with anything! 

Feel free to personalize! This goes well with chicken, grapes, cranberries, apples, feta, or whatever you enjoy in your salad!

All you'll need for the basic salad mix: 
- 1/2 purple cabbage
- 2 cups baby spinach 
- 1/2 head iceberg lettuce
- 2 stocks celery
- 2 stocks green onion
- 1/2 cucumber 

I, personally, enjoy this salad with a strawberry vinaigrette with blackberries and blueberries. These veggies has enough crunch, especially with the celery, it does not need croutons. I have had a difficult time trying to include red cabbage into my diet because it is a super food. Red cabbage and spinach raw is low in calorie, but very rich in nutrients such as magnesium, calcium, iron, phosphorus, copper, zinc and other essential elements. Red cabbage is richer in vitamins and minerals than green cabbage. What I am most a fan of is red cabbage also helps fight inflammation so it aids digestion and arthritis. Not only does this look beautiful in colors, but it is simple, nutritious, and works with any style salad you want!
